Carolyn Accardi, PhD, RD
Program Director

Dr. Carolyn Accardi leads research integrating metabolomic platforms for studies focused on human health, disease, nutrition, physical activity, pediatric medicine and environmental exposures. Her collaborative research explores the metabolic underpinnings of health, human development and disease pathophysiology.

Dan Benardot, PhD, RD, FACSM
Professor of Practice

Dr. Benardot received his Ph.D. from Cornell University, is a Registered and Licensed Dietitian/Nutritionist, and is a Fellow of the American College of Sports Medicine.

Dr. Noble studies the physiology of slow, deep breathing - a core component of meditation - using rodent models that allow for robust control over experimental variables.

Research Professor

Dr. Pachón’s research interest lies in food-based approaches to address malnutrition and specifically to fortification: adding vitamins and minerals to staple foods as they are processed for human consumption.

Cassandra Quave, PhD
Associate Professor of Dermatology and Human Health

Dr. Cassandra Quave leads antibiotic drug discovery research initiatives. Trained as a medical ethnobotanist, her research is focused on the documentation and biochemical analysis of botanical remedies used in the traditional treatment of infectious and inflammatory skin disease.

Dr. Howard I. Kushner is the Nat C. Robertson Distinguished Professor of Science & Society Emeritus at Emory University in Atlanta, Georgia and the John R. Adams Professor of History Emeritus at San Diego State University. A historian of medicine and neuroscience, Kushner is author of five books and numerous articles on the history of suicide and of addiction.
